Emerging

I am emerging from this infection. Life seemed to have just stopped for a couple of weeks. I am on the mend, but won't be completely healed for another 6 weeks. I am slowly returning to life as I knew it. I have started up my Wii again, but no Yoga poses that require standing on one leg. I don't want to fall off my Wii board and break anything. Because of the ear infection, my equilibrium is still off! I also cooked a meal!! (Something I don't do when I don't feel good!) I made Pulled Pork in the Crockpot. Extremely easy and yummy!

Ingredients:
  • 1 (2 pound) pork tenderloin
  • 1 (12 fluid ounce) can or bottle of coke
  • 1 (18 ounce) bottle of your favorite barbecue sauce
  • 8 hamburger buns, split and lightly toasted

Place the pork tenderloin in a slow cooker; pour the coke over the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 7 hours.(I told you it was easy!) Drain well. Stir in barbecue sauce. Serve over hamburger buns. (I personally don't like my buns toasted!)

It cooked all day while I was at work. It took a minute to shred the pork. Oh!!! So Good!!!

Planning???

Planning? What is it about this word? Does it own some kind of power?Does it give us some kind of control? This week has not gone to plan at all!!! Sunday night I awoke at 11:45 pm with a stabbing ache in my ear! I think to myself, "Darn, I'm getting an earache, and I have nothing for it!" Around 2:30 am, I seriously thinking about calling 911, because the pain is excruciating. But I think, "How silly. An ambulance comes to my house for an earache!" At 4:30 am, I drive myself to WalMart (which is open 24 hrs) to buy some drugs. They do nothing for me. I get on Care Now web check-in. They don't open until 8am. By then I will be suffering for over 8 hours! Mom takes me to Care Now. At one point she is afraid I am going to pass out from the pain. The doctor gives me two shots in my bum and two prescriptions. I was down and out for two days straight! I am finally up and about, but my ear is still plugged up and ringing. People ask me why I didn't go to the doctor sooner. I went to bed Sunday night at 10 pm feeling fine. My first sign that something was wrong was at 11:45 pm. No doctors are open! I have decided if it ever happens again, I will call mom to take me to an emergency room! I took Mon. and Tue. off from work, and luckily it iced, so I get to stay home on Wed. too. I plan to go to work on Thursday, but I won't be 100%. It is hard to teach little ones when you aren't 100%. My menu planning for the week is shot. So I think I will keep most of them for next week. Jordan and I did manage to make Sarah's chicken pockets last night together. They were fun, easy and good!!
Please pray that my ear infection clears up soon. I hate not feeling good! I got a new Wii and Wii Fitness, and I want to work out!!

A Week of Deadlines!

I am thankful that last week is over! Kindergarten's first report cards went out Friday. Graded Writing samples were due on Friday, and TPRI testing needed to done by Friday! I brought the report cards home to work on over MLK weekend. Or at least I thought I had! My school bag never saw the light of day MLK weekend. Tuesday evening I sat down to complete report cards and they were not in the bag! Where were they?? Wednesday morning I found them on my desk at school. So my report cards were completed Wednesday evening after church activities. Thursday evening I sat down to grade the writing samples I had gathered Tuesday evening. NO WHERE TO BE FOUND!! Prehaps I had taken them to school and left them. NO!! I lost them!! I still haven't found them!! So my kids did a special writing assignment on Friday morning, and I graded them during lunch. I did finish the TPRI testing and will enter that data on Monday at school. Whew! The hard part was during this whole lost them, found them, lost them and didn't find them, I was dealing with Auto insurance because of an accident in the parking lot Sunday at Chipolte, and I was dealing with a sick teenager! The week is behind me, and I am looking forward to a less stressful week ahead. The wonderful thing was that I leaned on God a lot last week. It was a week where he carried me through! There is no way I could have made it on my own accord. Thank you God for being there!!
